BEEF & MUSHROOM PIE RECIPE

During these cold, winter months we all want something comforting, warm and best of all, easy to put together for the whole family.

Pies are the perfect comfort food to warm you up on a chilly winter day, and this Beef and Mushroom pie recipe is absolutely delicious and a favourite for everyone to enjoy.

INGREDIENTS

600g diced beef
2 large flat mushrooms
4 carrots
4 shallots
4 cloves of garlic
500g puff pastry
plain flour for dusting
1 litre beef stock
30g beef gravy powder
sprig of thyme
salt and pepper

METHOD

Dice the carrots, shallots and garlic and fry in a little oil until translucent.

Chop and add the thyme, cook for a couple of minutes. Chop and add the mushrooms and fry until cooked. Put to one side.

Dust the beef with seasoned flour and fry in a pan until golden brown, add the cooked vegetable mix and add the beef stock.

Cook for about 1 hour or until the beef is tender, add the gravy powder and thicken. Cool the mix.

Roll out the puff pastry until 2mm thick and line a tart case.

Fill with the cooled pie mix.

Roll out the trimmings and place on the top, trim and egg wash.

Cook at 180 degrees C until golden brown and the pastry is cooked through.

To help crisp the bottom you can place the pie on a pizza stone or heavy metal tray that has already been heated up in the oven.

Cut the pie and serve with mashed potato and Cavolo Nero or your favorite cabbage.
