CAMPFIRE RECIPES

A recent study showed that Grandparents found that spending time with their grandchildren keeps them feeling young. Add that to the huge benefits of spending more time outside and we’re on to a winner. With more parents going back to work or taking a break, its the role of the grandparent to keep the kids entertained, and how about creating a campfire meal for education and fun. We have some easy family friendly campfire recipes below.

BBQ Chicken Parcels

Serves 4

These parcels are healthy, packed with flavour, and so fun to cook on the grill and eat outside.

Ingredients

boneless skinless chicken breasts, cut in 1-inch pieces
cups barbecue sauce
cups drained pineapple tidbits
red bell pepper, diced
small red onion, diced

METHOD

Cut 4 large sheets of foil.
In a bowl, toss together the chicken pieces and the barbecue sauce until chicken is fully coated.
Divide the chicken, pineapple, bell pepper and red onion, evenly between the sheets of foil.
Bring up 2 sides of foil on each parcel so edges meet. Seal edges, making a tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.
To cook, place foil packs on the barbeque /campfire grill. Cook for 20-25 minutes or until juice of chicken is clear when cut.
Serve and enjoy.

Cheesy Potatoes

Serves 4

This cheesy potato dish is ideal for outdoors, you can prepare everything in advance and just chuck it all in one pan over a campfire. It is filling and full of flavour, yet really simple.

Ingredients
30 cooked, cooled new potatoes
6 rashers of smoked bacon, diced
300ml tomato passata
6 tbsp sriracha sauce (leave it out if you don’t want the heat)
300g mature cheddar, grated
50g butter
2 tbsp rapeseed oil
seasoning

METHOD

Put your pan over the campfire. Add your butter and oil and leave to get sizzling hot. Add your potatoes and cook for a few minutes before adding your bacon, saute until your potatoes and bacon are browned and starting to get crispy.

Drain some of the oil away. Add your passata and sriracha to the centre of your pan over your potatoes, season and leave to heat through.

Now add your grated cheese and lightly cover with foil until it is all bubbling and gooey.

Serve and enjoy!

S'mores Campfire Cones

Serves 6

These homemade S’mores Campfire Cones are so easy. Heat over a grill for the perfect S’mores Dessert to end your campfire adventure.

Ingredients
6 Sugar or Waffle Cones
1 bag Mini Marshmallows
6 oz Chocolate Chips
optional: Butterscotch Chips

METHOD

Fill each cone with marshmallows and chocolate chips (and optional butterscotch chips).

Wrap in aluminum foil.

Heat on the grill for 7 – 10 minutes. Keep away from direct flames.

Unwrap and enjoy! Be careful as contents may be hot.
