COCKTAIL OF THE WEEK - POMEGRANATE MINT JULEP

Although in the films James Bond is often seen ordering a martini shaken not stirred. In the books written by Ian Fleming, our super spy enjoys a mint julep on the veranda of his porch in the Caribbean. This recipe has a twist with the addition of pomegranate which really cuts through the sweet sugar syrup.

INGREDIENTS

75ml Bourbon
12 mint leaves
35g pomegranate seeds
12.5ml sugar syrup (200g sugar and 100ml water boiled together)
Handful of crushed ice

METHOD

Bash the mint leaves in the bottom of a cocktail shaker with a pestle.

Shake the bourbon with half the ice, bashed mint, and sugar syrup vigorously.

Churn with a long-handled spoon with most of the pomegranate seeds and more ice.

Serve in a long glass or tankard topping with ice and garnishing with mint and the remaining pomegranate seeds, and if you like a wedge of lime.
