COCKTAIL OF THE WEEK - PORNSTAR MARTINI

This week's cocktail is the modern classic Pornstar Martini, invented by Douglas Ankrah for the LAB bar in London in 1999. Recommended by bar team member, Harry, from Harben House Hotel, who's made a few (see picture below).

1 1/2 ripe passion fruits (they should have a crinkly appearance), halved
60ml vanilla vodka
30ml passoa
1 tbsp lime juice
1 tbsp sugar syrup
Shot of prosecco / champagne to serve

Scoop the seeds from one of the passion fruits into the cocktail shaker, add the vodka, passoa, lime juice and sugar syrup.

Add a handful of ice and shake well, fine strain into a martini glass. Add half a passion fruit for decoration.

Separately pour prosecco or champagne into a chilled shot glass to serve on the side.

Serve immediately and enjoy!
