The perfect combination of basil and lemon make this a really refreshing cocktail. The egg white also makes such a difference to the drinking experience. For a twist add some pomegranate seeds at the last moment.

50ml Gin
6 basil leaves leaves plus one for garnish
15ml Lemon juice
10ml sugar syrup (200g sugar and 100ml water boiled together)
1 egg white
Handful of crushed ice


Bash the basil leaves and sugar syrup in the bottom of a cocktail shaker with a pestle

Add the gin and lemon juice to the shaker with half the ice, the bashed basil and sugar syrup and shake vigorously

Strain back into the shaker and then add the egg white and shake for another 20 second

Serve in a martini glass over crushed ice and garnish with a basil leaf
