RECIPE OF THE WEEK - BEER CAN CHICKEN

With the hot weather continuing we just had to share this easy chicken recipe for the barbecue or oven.

Novelty barbecue fun or the most moist, juicy and delicious chicken you've ever tasted....you decide!

INGREDIENTS

Whole cleaned chickens
1 can of beer per chicken

Marinade
100ml veg oil, 100ml water, 50 ml Worcestershire sauce, 50ml soy sauce, 1 tspn mustard powder, 100ml dark brown sugar, 1 tspn chilli powder, 5 cloves crushed garlic

Glaze
200g marmalade, 50g chopped chives, 100g honey, 100ml cider vinegar, 2 lemons juiced

Dressing
1 lemon juiced, 100ml olive oil, 1 tbsp white wine vinegar, 50g chopped chive

METHOD

Mix all the marinade ingredients together and marinate the chicken for 4-6 hours.
Make a vinaigrette with some of the lemon juice, olive oil, chives and season.
If you have a bbq with a lid on preheat to 150c, if not use an oven.
Mix together the glaze ingredients.
Open the beer can and pour a little out or drink, sit the chicken onto the beer can and place in the oven or on the bbq with a lid.
Cook for an hour and a half, glazing all of the time with a thyme or marjoram brush.
After an hour and a half remove the beer can, re-glaze and cook directly onto the bbq or oven tray, until browned on all sides.
Rest for 15 mins, then serve with a lemon and chive dressing.
