RICE & SALMON PARCEL RECIPE

It's mental Health Awareness Week from 10th - 16th May, so we thought we would focus this week's recipe on a mood boosting dish with salmon.

To help boost your mental health, you can focus on eating plenty of fruits and vegetables along with foods rich in omega-3 fatty acids, such as salmon. Dark green leafy vegetables in particular are brain protective. Nuts, seeds and legumes, such as beans and lentils, are also excellent brain foods.

INGREDIENTS

Serves 4

2 x 250g packs microwave long-grain rice, uncooked
200g fennel bulb, halved and finely sliced
1 lemon, sliced
1 red pepper, finely sliced
4 salmon fillets
35g rocket

METHOD

Preheat the oven to gas 6, 200°C, fan 180°C.Cut four 30 x 40cm pieces of non-stick baking paper and divide the rice, fennel, lemon, pepper and salmon fillets between them.Season, then wrap the paper around the fish and vegetables to make parcels.

Place on a large baking tray and bake for 20 mins until the salmon is cooked through and the vegetables are tender. Serve scattered with a handful of rocket.

Serve with some brain protecting dark green leafy vegetables.
