Summer Pasta Salad

Sometimes it just too hot to be slaving over a cooker in the evening, but the family still need to be fed. How about trying a summer pasta salad, it's filling but easy, fresh and light.

INGREDIENTS

SERVES 4

500g pasta (any shape you like/have)
3 peppers, seeds removed and diced (use red, orange or yellow- as they are sweeter)
1 large cucumber, chopped
1 jar/tin artichoke hearts, drained and chopped
1 punnet of cherry tomatoes, halved
1 cup balsamic vinaigrette (1/2 cup oil, 3 tbsp balsamic vinegar, 1 tsp mustard, 1 tsp honey, 1 clove garlic & salt & pepper to taste mixed)
1 cup crumbled feta cheese
1/3 cup finely chopped basil
Salt and black pepper, to taste

METHOD

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente (firm when bitten). Drain, then rinse with cold water to cool.
In a large bowl, combine pasta, peppers, cucumber, artichoke hearts, and tomatoes.
Pour the balsamic dressing over the pasta salad and gently stir to combine. Add the feta cheese and basil and stir again. Season with salt and pepper, to taste. Chill until ready to serve.
